Miso noodle bowl with roasted vegetables & umami drip

Sometimes all you need is a bowl of noodles to make you believe in anything again. This bowl is our plant-based soul-warmer—with creamy miso, roasted vegetables, and, of course, a generous dose of umami 🍄💥
A quick dinner that tastes like it was smuggled out of a fancy ramen place.
Bonus: You don't need five different sauces. You only need this one .
Ingredients (for 2 people):
– 200 g udon or ramen noodles
– 1 tbsp miso (light or dark)
– 1–2 tsp Umami Drip
– 1 tbsp sesame oil
– 1 garlic clove, finely chopped
– 200 g broccoli
– 1 carrot
– 1 handful of shiitake (or mushrooms)
– Toppings: spring onions, sesame, chili oil
Preparation:

Chop the vegetables into small pieces and roast them on a baking tray with oil and salt (200 °C, approx. 20 min).

Cook pasta according to package instructions.

In a pan, mix miso, sesame oil, garlic and umami drip to make a sauce and simmer briefly.

Mix pasta and vegetables with the sauce.

Serve with toppings – and enjoy.
