How we make our sauce – with love, mushrooms and damn good ingredients 🍄💥

Actually, we just wanted to grow mushrooms.
But then we had… let’s say… a little fungal problem .
Our farm in Cologne (👉 pilzling.com ) was doing so well that we regularly harvested more than we could sell directly.

Throw it away? Didn't go in the bag.
And so our journey into the world of fermentation began – with one question:
How can we capture, preserve and refine all the flavor of our mushrooms?


🍜 The idea: mushrooms, but with soy sauce vibes

We were inspired by traditional soy sauce recipes – not to copy them, but to rethink them.
Instead of soy, we use noble mushrooms . Instead of industrial mass production, we offer:
👉 Handcraft, care and damn good ingredients .

Our goal? A sauce that isn't just salty—but deep, round, and exciting. A plant-based umami bomb. 🍄💥

We believe that taste begins at its source . That's why we pay attention to every detail—from the mushroom to the bottle:

Organic substrate : Our mushrooms grow on regional, organic substrate – sustainable, nutritious, traceable.
Hand-picked varieties : We cultivate only the best types – including oyster mushrooms, king oyster mushrooms & lion’s mane mushrooms.
Organic grains from Europe : For fermentation we use koji rice or other grains from selected organic farms in the EU.
Time & Care : Our sauce ferments slowly because taste requires patience.
100% handmade : From mushroom harvesting to bottling – everything happens right here in Cologne. No machine-made gimmicks, just real hands.

For us, fermentation is not a trend, but an art form.
With the help of microorganisms, we transform our mushrooms into something completely new: a sauce with depth, umami, character.
